Cookie Sunday

I baked. If we have room in our suitcase, I'll take some of these for Luke and his friends. They're the cookie that I make most often and one that will remind Luke of home. I'd better get these into the freezer before Kevin and I eat them all.

Here's the recipe.
Jazzed Up Oatmeal Cookies
1 cup butter
1 cup brown sugar
1/2 cup white sugar
1 tsp vanilla
2 eggs
1-1/2 cups flour
1/2 tsp salt
1 tsp baking soda
3 cups rolled oats
1-1/2 cups dried cranberries (I like the orange flavoured ones best)
1-1/2 cups chocolate chips (I like the dark chocolate chips best)
  • Preheat oven to 375 degrees F
  • Cream butter with sugars and mix in eggs and vanilla
  • Mix the salt and soda into the flour and add to the creamed mixture
  • Stir in oats
  • Stir in cranberries and chocolate chips
  • Drop in mounds on cookie sheet
  • Bake for 10 minutes
Have one and try to resist a second. If you use the orange flavoured cranberries, they taste even better after a day because the orange flavour intensifies with some time. Yummmm ...
