Almond Pickerel Fillets
- 1/4 cup flour
- 1 egg, lightly beaten
- 1 tsp salt
- 1/4 cup dry bread crumbs
- 1/4 cup ground almonds
- 1/2 cup butter
- 1 pound pickeral fillets
- 1 Tbsp fresh lemon
- 1/4 cup sliced almonds
- salt and pepper
- Place flour in a shallow bowl.
- In another bowl, mix egg and salt.
- In a third bowl, mix the bread crumbs and ground almonds.
- Coat fillets in flour, egg, then crumbs, coating both sides.
- Set on rack to dry for a little while letting 2 Tbsp butter heat in a frying pan.
- Fry fish, turning once and adding another 2 Tbsp of butter, until fish flakes easily (about 5 minutes).
- Plate the fish and put it in the oven just to keep it warm.
- Add the remaining butter to the pan.
- Add the almonds and stir fry until they're browned.
- Add the lemon and salt and pepper.
- Pour the almond topping over the fish and serve.
